Quality is important
In the processes, both production and processing, our farm and mill meet the optimal characteristics for high quality coffee in the Tarrazú region. As for our farm, it is a café shaded by banana plants and poró trees, with the application of fertilizers according to the needs of the land and environmentally sustainable weed management. We take special care of each of our estates to obtain special results in the cup. We know that it is a process where each operation intervenes in the cup, so we take care of every detail.
Regarding the processing where our coffee is pulped and classified, we do it with strict quality and cleanliness standards, so that there is no type of contamination between each of our batches. As well as specific traceability for each of our batches, where you can know every detail of our process.
Arabica plants
We produce our coffee between 1500-1900 meters above sea level, where most of our coffee varieties are Caturra and Catuaí, due to their good behavior against diseases, their good production, and their performance in the cup are excellent, both are Arabica. We also produce varieties such as Mokka and Geisha, with lower production, but with intense flavors in the cup.
Sun drying
We use three types of drying processes for our coffees: honey, washed, and natural. Each one has unique characteristics that define them differently. The honey process takes approximately 15 days, the washing takes between 8 and 10 days, and the natural process, which is the slowest, requires at least a month to be dry.
Agricultural practices
We are a member mill of the NAMA CAFÉ (Nationally Appropriate Mitigation Actions) of Costa Rica, where the main objective is to produce and process sustainable coffee, with low carbon emissions. The project aims to reduce the carbon footprint generated by coffee production.
Our coffee from the 2016-2017 harvest has a footprint of 0.97 tons of CO2 per kg of processed green coffee. Basically, our carbon footprint is low. We are proud of this and continue to maintain an ecological approach.
The main actions we have carried out are:
1. Reduction in the use of fertilizers.
2. Use of the smallest amount of water and energy in our processes.
3. Planting trees that promote increased biodiversity and carbon fixation.
4. Determine and reduce our carbon footprint.
